Healthy Citrus Pear and Kale Salad
This detox salad is so scrumptious! Although it would be great anytime of the year, it makes me feel like spring is here and warm weather is on the way! I love the mix of the slightly sweet salad with the goat cheese, it is a great pairing. The kale and pumpkin seeds are nutritional powerhouses, making it full of antioxidants and vitamins to feed your body. What a tasty way to usher in warm weather!
Citrus Pear and Kale Salad
- 2 Tablespoon Olive Oil
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Blood Orange Juice*
- 1 Tablespoon Honey
- 1/2 teaspoon Blood Orange Zest
- 5 oz Baby Kale - chopped slightly
- 2 Tablespoon Raw Pumpkin Seeds
- 1 Pear Chopped
- 2-3 oz Soft Goat Cheese
- Salt and pepper to taste
Whisk together citrus juices, honey, zest and olive oil to make dressing. Toss Kale in dressing to completely coat leaves. Add pumpkin seeds and chopped pear and toss. Cut goat cheese into small pieces and add to salad, carefully tossing to mix.
*2 Tablespoons of lemon juice and lemon zest can be used in place of the blood orange.
